Chamilly Castle stands in the heart of a verdant valley located north of the Côte Chalonnaise, 20 minutes south of Beaune. This is the southern most area in Cote de Beaune.

It was built in the 17th century by Noël Bouton (lieutenant general of the armies of King Louis XIV, Governor of Strasbourg and Marquis of Chamilly) on the foundations of a fortified farm from the 14th century.

At the beginning of the 19th century, the Desfontaine family acquired it and the surrounding land. Lovers of stone and this unique living environment, the Desfontaines have never stopped restoring it and developing its surroundings.

A visit to the castle never leaves you indifferent and always makes you want to come back...

Tasting: This terroir is the neighbor of Bievaux. The very steep slopes and optimal southern exposure produce rich, concentrated wines with great minerality. Notes of ageing in youth will give way to a dynamic and full character after a few years. One of my most enjoyable wines in 2025 discovered.

Preparation:

Transporting grapes in small containers. Fermentation by grape yeasts and aging in Burgundy barrels (228L) Malolactic fermentation generally in spring. Stirring according to the tasting in order to nourish the wine while maintaining precision. 16 to 18 months of aging. For such a small vintage (3 barrels) we prefer barrels of one to three wines.

Food and wine pairing:

It goes very well with seafood as well as fish such as salmon, cod, etc. You can also serve it with white meat and other meats like veal and fresh game.
