The origin of Pouilly-Fuissé
The vineyards of Pouilly-Fuissé white wines extend over 800 hectares and encompass 4 villages: Solutré-Pouilly, Fuissé, Vergisson and Chaintré.
From the single Chardonnay grape variety, it was officially born on 13th January 1929 with the creation of the ‘Union des Producteurs de Pouilly-Fuissé’. The dossier recognizing the appellation d’origine contrôlée of Pouilly-Fuissé was made official by decree on 11th September 1936. It was one of the first appellations in France to be recognized as an AOC.

The perfect alchemy between an outstanding terroir and the single Chardonnay grape variety characterizes our Pouilly-Fuissé. La bonne connaissance de nos différents profils de sol nous permet de produire des grands vins de Bourgogne Pouilly-Fuissé et Mâcon Solutré-Pouilly. After harvesting grapes at full maturity - manually or mechanically - we bring to the vat-house rich juices which, after 24 hours of settling, are kept in French oak barrels or vats, where they undergo all of their fermentation and ageing, before bottling.

This cuvée, from several parcels at the domain, gives a mineral Pouilly-Fuissé with citrus aromas, thanks to the different types of soil on which it bears fruit. Limestone brings its minerality, clay its roundness. Our wine is vinified 60% in vat and 40% in oak barrel assemblage – from new up to 5 years old - for 8 months.
Vines of average age 40 years. It is important to understand the subsoil and originality of the different parcels that make up the cuvée ‘Terroir’, seeking to be above all the full expression of Chardonnay. On the palate is developed the freshness of minerality particular to Pouilly-Fuissé. Perhaps opening up immediately between 10° and 12°, it is ideal as an aperitif, with charcuterie cold meats, shellfish, salad starters, quiches, grilled fish and white meats, goat cheeses, hard-rind tomme cheese.
The palate, fruity together with discreet touches of lively, racy minerality, is balanced, finely acidulated, wrapped in ripe fruits, with a discreet thread of oak.
